One of my most popular recipes and seriously the best pumpkin muffins you’ll ever eat. I highly recommend you double the recipe and share with friends. These usually don’t last long.
Pumpkin Chocolate Chip Muffins
1 & ⅔ cup all-purpose flour
1 cup sugar
1 T pumpkin pie spice
1 t baking soda
1 t baking powder
¼ t salt
2 large eggs
1 cup plain canned pumpkin (if doubling recipe, use one 15 oz can)
½ cup melted butter
1-2 cups chocolate chips
Preheat oven to 350 degrees. Prepare muffin tins with liners.
In a large bowl, combine flour, sugar, pumpkin pie spice, baking soda, baking powder, and salt.
In a separate bowl, combine eggs, pumpkin, melted butter, and chocolate chips. Then, add wet ingredients to dry ingredients and mix well. Spoon batter into prepared muffin tins. For best results, use an ice cream scoop.
Bake for 28-30 minutes until lightly browned on edges. Best served warm right out of the oven or warmed in the microwave for 8-10 seconds. Enjoy!
