30-Minute Greek Meatballs

Need a quick dinner your family will love? I’ve got you covered with my 30-Minute Greek Meatballs. 

Meatballs are a staple on our dinner table because they’re delicious and can be frozen and re-heated for a fast weeknight meal. We enjoy my Greek meatballs served bowl-style with plenty of options to please everyone.

In addition to the meatballs, I set up a buffet with roasted sweet potatoes (because we all need extra veggies), feta cheese, store bought hummus and tzatziki sauce, and a simple salad of cucumbers, tomatoes, olive oil, and red wine vinegar. Greek meatballs are also delicious served over rice or salad greens and topped with Greek dressing or rolled into wraps with all the trimmings. 

For the bowls, I usually cook sweet potatoes in the air fryer with a little olive oil, garlic powder, salt and pepper at 400 degrees for 10 minutes. Do keep an eye on them so they don’t burn.

Also, if you don’t have a meat thermometer, buy one. Meat is best cooked to temperature, rather than time because everyone’s oven cooks differently. I’ll link mine, plus some other cooking essentials I use regularly, below the recipe.

30-Minute Greek Meatballs

1 medium red onion, grated

½ lb ground beef

½ lb ground pork

3 cloves garlic, minced

1 cup breadcrumbs (regular or panko)

1 egg

¼ cup chopped fresh parsley 

6 large mint leaves, finely chopped

1 T dried oregano 

1 T olive oil 

1 T salt

Pepper

Preheat oven to 400 degrees. Line a baking sheet with parchment paper.

Grate onion into a large bowl and add all remaining ingredients, including several grinds of fresh black pepper. Combine mixture well with your hands. I like using gloves for this!

Using a cookie scoop or tablespoon, portion out the meatball mixture, and gently roll with your hands to make approximately two dozen 1-inch diameter meatballs. Place meatballs onto the lined baking sheet.

Drizzle or spray meatballs with olive oil and bake for 15 minutes or until internal temperature reaches 160 degrees. Serve immediately or allow to cool and freeze. 

To reheat, bake in a 350 degree oven cook for 10-15 minutes or until internal temperature reaches 160 degrees
