• 30-Minute Fish Tacos

My family loves tacos, and my 30-Minute Fish Tacos have been a favorite for over a decade. These are full of flavor and come together quickly with a simple, flavorful marinade. We buy frozen mahi filets (Costco has great ones!), but if you have fresh fish, then by all means use that. While you’re marinating the fish, prepare some delicious toppings and condiments for a taco bar or board. I suggest shredded lettuce or cabbage (cole slaw mix works great), fresh chopped cilantro, lime wedges, sliced avocado or guacamole, salsa, sour cream or spicy aioli, and pickled onions. I’ve included recipes for spicy aioli and the tastiest pickled onions below. 30-Minute…

  • Friday Four- 2.9.24

Happy Friday, friends! We have a full weekend ahead. My son has an end-of-season basketball tournament tomorrow. Then, we have a dinner with friends and Super Bowl party on Sunday. I’m traveling for work next week, so will prep early for our Valentine’s dinner. Before all of that, here are four things that brought me joy this week and might do the same for you. ONE: How do you wash your sweaters? Years ago, I stopped dry cleaning mine because it was expensive and I hated the chemical smell. I’ve been handwashing them, but recently a friend shared her method. I tried it this week and was blown away. Here’s…

  • My Recent Amazon Finds

How’s your week going, friends? We’ve had beautiful weather and warmer temps, which makes us itch for spring. My kids are counting down the days until spring break, and it’s really starting to sink in that my oldest daughter is graduating in May! I’m so excited for her, but getting a bit sappy about it. Can anyone relate? One of the things that remains constant is my love for the convenience of Amazon. As a busy mom, I love how much time I save by not having to run to the store several times a week. I’m also convinced that it saves us money because I no longer get carried…

  • Sheet Pan Paella

I’m kicking off February with one of our family’s favorite recipes: Sheet Pan Paella. Longtime followers will remember this one. It is not a traditional paella by any means. Instead, it is paella-inspired and easy enough for a weeknight dinner. You can use regular smoked sausage or andouille if you like a little spice. For shrimp, frozen is usually the way to go, and it thaws quickly while you’re prepping the other ingredients. We really like the Argentinian red shrimp from Trader Joe’s. I usually have frozen rice on hand, but fresh also works fine. I rely on my rice cooker to do the work because I hate cooking rice…

  • Friday Four- 2.2.24

Happy Friday! In today’s Friday Four, I’m sharing four things that brought me joy this week and might do the same for you. ONE: Valentine’s Day is just around the corner. I love celebrating my people, and one of our traditions is to have a special Valentine’s dinner.  When my kids were younger, I would make them an early dinner of spaghetti and meatballs or heart-shaped buttered noodles with strawberries cut into hearts and a fun dessert. After we put them to bed, my husband and I would stay up late cooking our own special meal. Now, we have a big family dinner and try to make it special. This…

  • Valentine’s Day Gifts and Style

Welcome to February! I know Valentine’s Day is super commercialized, but I think it’s fun and will take every opportunity to celebrate the people I love. My husband and I decided years ago that we would forgo the gifts in exchange for a nice dinner—cooked together at home (because an overpriced Valentine’s Day menu is not our idea of fun). Now that our kids are older, we have a family Valentine’s dinner, and I always get my daughters a little something special. My son could not care less, so he usually gets a card and his favorite candy. If you’re up for celebrating, here are some gift ideas for the…

  • 30-Minute Greek Meatballs

Need a quick dinner your family will love? I’ve got you covered with my 30-Minute Greek Meatballs.  Meatballs are a staple on our dinner table because they’re delicious and can be frozen and re-heated for a fast weeknight meal. We enjoy my Greek meatballs served bowl-style with plenty of options to please everyone. In addition to the meatballs, I set up a buffet with roasted sweet potatoes (because we all need extra veggies), feta cheese, store bought hummus and tzatziki sauce, and a simple salad of cucumbers, tomatoes, olive oil, and red wine vinegar. Greek meatballs are also delicious served over rice or salad greens and topped with Greek dressing or…

  • Friday Four- 1.26.24

How was your week, friends? We are having a lovely time in Santa Barbara and are headed to Montecito for the day. I’m hoping for a celebrity sighting, a little shopping, and more sunshine before we head home to Dallas. In today’s Friday Four, I’m sharing four things that brought me joy this week and might do the same for you. ONE: I love birthday trips. I didn’t grow up traveling much, so I don’t take a single second for granted. If you missed Wednesday’s post, go back to read about my favorite travel essentials. Last year, we went to Charleston. It is one of my favorite places to spend…
